The day begins at the Tourism Meeting Point at 10h45, where each guest receives a harvest basket, pruning shears, a Casas del Bosque apron and a keepsake wine glass. From there, it’s into the vineyards alongside a bilingual Wine Educator to learn the techniques of hand-harvesting grapes: a personal introduction to vineyard life and the rhythm of the land. By midday, the experience ascends to the Mirador or Tranque de Los Olivos (depending on availability) for a guided tasting of Sauvignon Blanc Botanic, enjoyed with sweeping views of Casablanca Valley. Here, guests gain insight into the region’s cool-climate viticulture, its sustainable philosophy, and the spirit behind each bottle.
After selecting and sorting your harvest in the courtyard, explore the inner workings of the winery itself, from fermentation and barrel ageing to bottling and labelling. The experience concludes in the tranquil La Virgen garden with a glass of Pinot Noir from the Botanic Series, paired with a seasonal cheese empanada, cherry tomatoes and basil.
