Botswana Beef is Best!

Very few people know that Botswana produces some of the best beef in Africa.  This is one of my favourite steaks from Sandibe Safari Lodge.

Beef-filet

INGREDIENTS
10         225g fillet or sirloin steaks
3 Cups         Beer
1 ½ Cups     Olive oil
¾ Cup         Soy sauce
3 Tbsp         Crushed garlic
3 Tbsp         Fresh ginger, grated
1 Tbsp         Fresh chilli, seeded and chopped
1 Tbsp         Paprika
2 Tbsp         Ground black peppercorns
2 Tbsp         Crushed coriander seeds
½ Cup         Olive oil for cooking
20         Large cloves garlic peeled
Salt and pepper to taste
To serve:
Banana leaves and fresh chillies

METHOD
•    In a deep ceramic dish combine the beer, olive oil, soy sauce, crushed garlic, ginger, chillies, paprika, ground peppercorns and coriander crushed
•    Add the steaks and coat well in the marinade. Leave for 6 hours to marinade
•    Heat a large frying pan and add the olive oil for cooking. Grill steaks and garlic cloves
•    Seal steaks for 3 minutes on each side and cook to desired degree
•    Season with salt and pepper
•    Reduce marinade and use a glaze on the meat
•    To serve – wrap each steak in a banana strip and garnish with chillies and grilled garlic
