My Favourite Biscuit Recipe from Mnemba Island

Chocolate Black Pepper Biscuits

Ingredients
• 250g butter , softened
• 140g caster sugar
• 1 egg yolk
• 2 tsp vanilla extract
• 250g plain flour
• 50g cocoa powder
• 1 tsp freshly crushed black pepper (this can be quite coarsely crushed and you can vary the amount according to your taste.

Mix the butter and sugar in a large bowl with a wooden spoon, then add the egg yolk and vanilla and briefly beat to combine. Sift over the flour, cocoa and black pepper and stir until the mixture is well combined, mixing with your hands if necessary. Press the dough together.  Roll into small balls, place onto a greased baking sheet and press down lightly with a fork to make indentations.
Bake at 180*C for 12-15 minutes.
Take out of the oven and allow the biscuits to cool in on the baking sheet.

Well I don´t know about the biscuits, but that island surely is gorgeous. If heaven exists, it would very likely look like Mnemba. The staff, the lodge, the diving…..simply awesome.

I agree – my favourite place to relax after safari, need to get back someday soon.
